Ingredients
1 cup farro, uncooked

1 tbsp honey or maple syrup
1 tbsp lemon juice
1 tsp lemon zest
2 cups roasted butternut squash or sweet potato
1 cup baby spinach or arugula
1/3 cup toasted walnuts or pecans
2 tbsp olive oil
1 tbsp fresh rosemary, chopped

Instructions
- Cook the Farro
Simmer farro in broth for 25–30 minutes until tender. Drain any excess liquid. - Make the Cranberry Lemon Glaze
In a small saucepan, heat cranberries, honey, lemon juice, lemon zest, and a pinch of salt for 5–7 minutes until berries burst and mixture thickens. - Prep the Vegetables
Roast squash or sweet potato at 400°F (200°C) for 20–25 minutes until caramelized. - Assemble the Bowl
