3 tbsp chia seeds

Pinch sea salt
Handful fresh cranberries (topping)
2 tbsp toasted coconut flakes

Instructions
- Make the Cranberry Compote
Combine cranberries, maple syrup, vanilla, water and cinnamon in a small saucepan. Simmer for 5 minutes until berries burst and mixture thickens. Cool completely. - Prepare the Chia Pudding
Whisk coconut milk, chia seeds, maple syrup, vanilla and sea salt. Let sit for 10 minutes, whisk again to prevent clumping then refrigerate for 2 hours or overnight. - Assemble
Layer chia pudding, cranberry compote, and more chia pudding in jars or glasses. - Finish
Top with fresh cranberries, toasted coconut flakes, and granola or nuts if desired. - Serve
