Ingredients
1 cup rolled oats
1/2 cup almond butter
2 tbsp maple syrup
1 tsp vanilla extract
Pinch sea salt
1/3 cup dried cranberries (or finely chopped fresh cranberries)
1/4 cup chopped almonds
2 tbsp chia seeds
Optional 2 tbsp mini dark chocolate chips
Optional 1 tbsp ground flaxseed
Instructions
- Combine oats, almond butter, maple syrup, vanilla, chia seeds and sea salt in a bowl until a thick dough forms.
- Fold in dried cranberries and chopped almonds. Add chocolate chips or flaxseed if using.
- Scoop tablespoon-sized portions and roll into balls.
- Place on a parchment-lined tray and refrigerate for 20–30 minutes until firm.
