3 cups roasted butternut squash (cubed)
1 tbsp olive oil
1 small yellow onion, diced
3 cloves garlic, minced
1/2 cup unsweetened almond butter
1 1/4 cups vegetable broth
1/4 cup grated Parmesan
1/2 tsp sea salt
1/4 tsp black pepper
340 g pasta of choice (penne, rigatoni, or fusilli)
1/4 cup fresh basil or parsley, chopped
2 tbsp toasted almonds or pumpkin seeds, for garnish
Instructions
- Cook the pasta
Bring a large pot of salted water to a boil. Cook pasta until al dente. Reserve 1/2 cup of pasta water, then drain. - Sauté aromatics
In a large skillet, heat olive oil over medium. Add onion and cook until softened, about 5 minutes. Add garlic and cook 1 minute more. - Blend the sauce
Transfer sautéed onion and garlic to a blender. Add roasted squash, almond butter, broth, nutritional yeast or Parmesan, salt, and pepper. Blend until smooth and creamy. - Warm the sauce
Pour the sauce back into the skillet over low heat. Add a splash of pasta water if needed to loosen the texture. - Combine
Add cooked pasta to the skillet and toss until evenly coated in the creamy squash‑almond sauce. - Finish and serve
Top with fresh herbs and toasted almonds or pumpkin seeds. Serve warm.
