Ingredients
1 cup cooked quinoa
1 cup roasted pumpkin cubes
1 ripe pear, thinly sliced
1 cup baby arugula or spinach
1/4 cup feta or goat cheese
2 tbsp candied pecans or walnuts
1 tbsp pumpkin seeds
2 tbsp olive oil
1 tbsp lemon juice
1 tsp maple syrup
1/2 tsp cinnamon
Pinch sea salt
Instructions
- Make the dressing
Whisk olive oil, lemon juice, maple syrup, cinnamon, and sea salt until smooth. - Prep the base
Add warm quinoa to a bowl and toss with half the dressing. - Add greens
Fold in arugula or spinach gently so they stay fluffy. - Layer the toppings
Add roasted pumpkin, pear slices, feta, nuts, and pumpkin seeds. - Finish
Drizzle remaining dressing and serve warm or room temperature.
