Ingredients

4 chicken thighs, bone-in, skin-on
1 cup fresh or frozen cranberries
2 tbsp olive oil
2 tbsp honey or maple syrup
2 garlic cloves, minced
1 tbsp fresh rosemary, chopped
1 tsp lemon zest
2 tbsp lemon juice
1/2 cup chicken broth
to taste salt & pepper

Instructions

  1. Season the Chicken
    Pat chicken thighs dry. Season generously with salt and pepper.
  2. Sear
    Heat olive oil in a skillet over medium-high. Sear chicken thighs skin-side down for 5–6 minutes until golden. Flip and cook 3 minutes more.
  3. Make the Cranberry Rosemary Sauce
    Add cranberries, honey, garlic, rosemary, lemon zest, lemon juice and chicken broth to the skillet. Stir gently.
  4. Simmer
    Reduce heat to medium. Simmer 20–25 minutes until cranberries burst and sauce thickens.
  5. Finish
    Taste and adjust seasoning. Spoon sauce over chicken and serve warm.
