Ingredients

3 tbsp unsalted butter
3 large leeks white + light green parts only, sliced
2 Yukon Gold potatoes, peeled + diced
4 cup, vegetable or light chicken stock
1 cup whole milk or light cream
1 bay leaf
to taste sea salt + white pepper
optional chives, crème fraîche or olive oil for garnish

Instructions

  1. Sauté the leeks
    Melt butter in a pot over medium heat. Add sliced leeks and cook 8–10 minutes until soft, sweet, and translucent without browning.
  2. Add potatoes + stock
    Stir in diced potatoes, bay leaf, and stock. Bring to a gentle simmer and cook 15–20 minutes until potatoes are tender.
  3. Blend until velvety
    Remove bay leaf. Blend the soup until completely smooth and silky. Return to the pot.
  4. Finish with milk or cream
    Stir in milk or cream. Warm gently over low heat. Season with sea salt and white pepper.
  5. Serve Parisian‑style
    Ladle into bowls. Garnish with chives, a spoon of crème fraîche, or a drizzle of olive oil.
