Ingredients
6 large leeks, trimmed and halved lengthwise
2 tbsp unsalted butter
1 tbsp olive oil
1 cup heavy cream

Instructions
- Prep the leeks
Trim the dark green tops and root ends. Slice leeks lengthwise and rinse thoroughly between layers to remove grit. - Sauté gently
In a wide skillet, melt butter with olive oil over medium heat. Add leeks cut‑side down and cook 5–7 minutes until lightly softened. - Deglaze
Pour in white wine (if using) and let it reduce by half, coating the leeks with a glossy base. - Add cream
Lower heat and pour in heavy cream. Add Dijon, salt, and white pepper. Stir gently to combine. - Braise
Cover and simmer 10–12 minutes until leeks are tender, silky, and infused with the cream. - Finish
Taste and adjust seasoning. Sprinkle with chives or parsley before serving.
