1 sheet butter puff pastry, thawed
3 large leeks, cleaned and thinly sliced
2 tbsp unsalted butter
1 cup Gruyère cheese, grated
3 large eggs
1 cup heavy cream
1 tsp Dijon mustard
1/2 tsp sea salt
1/4 tsp black pepper
1 tsp fresh thyme leaves
Instructions
- Prepare the pastry
Preheat oven to 375°F (190°C). Roll out puff pastry and fit into a tart pan. Dock the base with a fork and blind‑bake for 10 minutes. - Cook the leeks
In a skillet, melt butter over medium heat. Add sliced leeks and cook 8–10 minutes until soft, sweet, and wilted. Season lightly with salt. - Make the custard
Whisk eggs, cream, Dijon, salt, pepper, and thyme until smooth. Stir in half the Gruyère. - Assemble
Spread the cooked leeks evenly over the pastry base. Pour the custard over top. Sprinkle remaining Gruyère across the surface. - Bake
Bake 25–30 minutes until golden, puffed, and set in the center. - Cool & serve
Cool 10 minutes before slicing. Serve warm or room temperature.
